Best Biscuit Recipe Ever

Amazing biscuits, you get a lot of credit and marital bliss for these. Also makes great dumplings, or topping for chicken pot pie instead of crust. Can add 2T sugar and use as a topping for cobblers, or add just a bit more sugar, cinnamon and dried fruit for scones.

2c flour
2t baking powder
1t salt (scant)
1/4 t soda
1/2 c (1 stick) butter
1 c buttermilk (not ideal, but you can also put 1T vinegar or lemon juice in measuring cup and use regular milk to fill to 1c. wait 5 minutes before using)

Mix dry ingredients, blend in butter until like fine meal (can use hands, pastry blender or food processor, I say hands).

Add buttermilk and mix just until moist.

Generously flour your counter and pour out dough (kind of wet). Sprinkle flour on top, pat to desired thickness and cut out biscuits with a well-floured cup. I like mine tall and big, but small ones make them go farther (they do rise a bit--use fresh baking powder).

Bake in a greased pan or cookie sheet at 450 degrees until golden brown --about 10 minutes. (I don't have mine touch when baking).
