Basic Waffle Recipe

These work well in our fancy belgian waffler (thanks paw and maw in law!)

2 eggs
2 c flour or whole wheat flour
1/2 melted butter (or vegetable oil)
1 3/4 cups milk
1 T brown sugar (white is also fine)
4 t baking powder
1/4 t salt
1/2 t vanilla

Beat eggs until fluffy, mix in remaining ingredients just until smooth, cook two minutes on a hot iron (some irons take 5). You can always be fancy and separate the whites, beat them to stiff peaks, then fold in the rest of the ingredients after you've mixed them.
