Homemade Corn Tortillas

SO much better than store-bought!

2 c masa
1 tsp salt
1 1/4 cup hot water + 2-3 Tbs
1 tsp shortening

Melt shortening in warm water, pour into masa. Add additional Tbs of water as needed until dough is workable. Knead 2 minutes. Roll out between two pieces of plastic wrap (or use tortilla press) and fry on each side. (when frying second side, can add cheese on top and make a superfast quesadilla).
